Parma Rosa with Chicken Sausage

1 package knorrs parma rosa
1 package your favorite chicken sausage
1/2 pound bow tie pasta
  1tsp    garlic pepper
Parmesan cheese
1 cup fat free milk

boil pasta in pot

In a different pot place chicken sausage sliced,knorr's package,garlic pepper milk in pot over med heat  till mixed well,. when pasta is cooked drain added to sauce heat together for 5 minutes with parm on top

Zucchini Pasta

1-zucchini shredded
4 oz cream cheese
2 oz grated cheese

1cup fat free milk
12 oz wheat or garden pasta
garlic powder
 onion powder
salt n pepper
2 tbsp olive oil

 place olive oil in bottom of pot zucchini cook for 2-3 minutes add cream cheese  milk,cheese,garlic,onion,s,p,boil pasta mix together  
Serving Size 3/4 Cup Calories-152 per serving

Buffalo Stuffed Chicken

Ingredients:
5 laughing cow (blue cheese or your flavor choice)
1/4 pound Blue Cheese
2 tbsp hot sauce
2 carrot
2 celery stalks
2 pounds of chicken breast (thin sliced)
1/2 red onion
1/4 cup white wine
 2tbls butter
2tsp garlic
2tsp parsley
2tsp paprika
salt n pepper  to taste








 1.shred all vegetables in with grader or in presser put into bowl w/ hot sauce
 2.cut laughing cow in half so its easy to spread on cutlets
 3.crumble blue cheese
 4.spread 1/2 laugh cow , 1 tbsp veg mix , crumble blue cheese in middle roll up place in pan and repeat till done
 add wine ,butter, water,spice on top bake at 350 degrees for 45 min

Chicken Gone Green!

1 lb chicken breast cut in 1 inch cubes
4 oz can or jar artichoke heart sliced and chopped
1/2 red pepper chopped
2 cloves garlic chopped
1/2 0f 10 oz box of spinach (CHOPPED)
3tbsp balsamic vinegar
2tsp olive oil
salt pepper to taste
2tbsp white wine
1 cup chicken stock
1 box couscous

In a pan cook chicken  till brown  then remove place in garlic , pepper spinach for 5 min simmer with cover then put chicken and artichoke back in pan for 5 to 7 min on low add salt and pepper add vinegar,chicken stock; wine.
 Serves 6

Pizza Night!

Do you love Margarita pizza but hate the calories? This is a cheesy healthy alternative for your favorite pizza!


Ingredients:

Whole wheat dough
part skim ricotta
 1 ounce part skim mozzarella
 12 grape tomatoes sliced in 1/2
basil garlic and pepper







 Roll out your dough on a floured surface.
 to 16 inch circle place on pizza pan bake crust for 10 minute on 400 then remove from oven
and start with ricotta cheese next mozzarella then sliced tomatoes basil garlic pepper place back
place on pizza pan bake crust for additional 10 minute on 400 then remove from oven

Chinese Dim sum!

Yesterday we received an email from a reader who loves Chinese food but hates grease and had some dietary restrictions. This reader was on a dairy and cheese free diet and was looking for a lo-cal replacement for his favorite Chinese snack!


Low Cal Dim-Sum.

Serving Size 10 dim sum- 90 calories per serving
Makes 45

Ingredients
45 wonton wrappers ( or tofu wrappers) which can be found in your local Asian market or produce section.
One pound of pork chop meat
two carrots
two stalks of celery
one head of garlic
one root of ginger (or a 1/4 pound of ground)
Four blades of scallion
one teaspoon cilantro
two teaspoons of  white wine
Black pepper
1 egg

1- Process all veggies in food processor
2- Put meat in bowl with all veggies and yolk of egg, mix and add spices  and wine and soy sauce ( for your taste)
3- Roll into meatballs and put in center of wonton wrapper.
4- Bring all corners to top and twist
5- Line cookie sheet with wax paper and spray with cooking spray
6- line on cookie sheet and freeze for 10 minutes
7- Put in steamer 10 minutes


If you don't have a steamer you can use a metal strainer over a pot with a cover.

You can also freeze raw for up to 60 days in freezer safe bag.

Colorful Pasta after a Flashy Holiday

I made this light dish after a long weekend of BBQs. Its a break from red,white and blue but still has a colorful flair. 

146 calories per serving

1/2 lb of chicken sausage
1/2 lb of garden Delight penne pasta
1/2 of red onion chopped
2 cloves of garlic chopped
3 tbsp of olive oil
1tsp of parsley
1tsp of dill
1tsp of basil
salt & pepper
6-0Z cream cheese.


place pasta in a pot of boiling water until cooked
place in pot olive oil chopped garlic and onions until lite brown.
add in all spices add cream cheese, and save a cup of water from drain pasta . mix together top with Parmesan cheese  and serve.
makes 6

Spinach Pie

1-10 oz box of spinach  (chopped)
6-oz  feta cheese
1-1/2 chopped onion
1- clove garlic
1- egg
1 tsp. olive oil
1 pack puff pastry shells 
dash salt & pepper

Cook and drain spinach for 6minutes in microwave, mix in sauteed onion and  garlic in olive oil mix together with egg salt and pepper full pastry shells place on greased cook sheet bake for 25 to 30 min. at 325

Buffalo Turkey Burger!

If you love chicken wings, this will fill your craving without the fat! Quick and Easy week night meal for a family...serve with fries!

Makes 4!

1 pound of Turkey chop meat
1 grated carrot
1 grated celery
1/4 of grated onion
3oz of Blue cheese crumbled
Hot sauce
1/4 cup of hot and spicy breadcrumb


Mix all ingredients in a bowl cut meat down middle and then again...makes four quarter pound burgers.

Cook stove top or on BBQ

:-)  200 cal per burger!

Monday is Italian! Asiago & Pesto Chicken Meatballs

Tonight's dinner is Low cal Italian meatballs! We decided to come up with this recipe after cascading the frozen food shelves for new meatballs ideas...with the outrageous calorie counts on frozen food. We decided to go fresh and save the calories.

 Asiago & Pesto Chicken Meatballs
 makes 48 meatballs serving size 6meatballs.
1-lb chicken chopmeat
1 Egg
Asiago 1/4 pound sherred
Pesto –fresh  or Jared
1/4 cup breadcrumbs – Italian  flavored
salt n pepper
Mix  all ingredients in bowl 
Roll into 2in- balls
Place on cook sheet sprayed with cooking spray
bake for 15min at 325
calories 126

Veggie Lasagna

A classic Italian comfort dish with a vegetarian twist!

1 small eggplant thinly sliced
1 small zucchini thinly sliced
1 ten ounce box of spinach
12 pieces of healthy harvest whole grain lasagna
Two pounds of part skim ricotta cheese
½ pound of part skim mozzarella cheese
4oz Parmesan or Romano cheese

Sauces:
White Sauce:
6 table spoons of margarine
6 tablespoons of flour
About one cup of your choice of milk/or cream (depending on consistency)

Ricotta mixed with one egg
One can of Crushed tomatoes

Bowl the lasagna (precook) 5 mins.
Spray cookie sheet with cooking spray and place zucchini and eggplant bake at 350 degrees for 20 mins
Cook spinach in microwave for 6mins on high- cool and drain well
Stack and chop all veggies well and place in separate bowls
Grade cheeses
In a baking pan line the bottom with two to three spoons of crushed tomatoes (like one quarter of can)
Place four noodles across pan

Layers for repeat:
Sprinkle some eggplant some zucchini and some spinach (half of each mixture) on layer one.
Place one pound of ricotta cheese on top of veggies
Layer mozzarella and Parmesan cheese next
Spoon white sauce to cover
Cover with four noodles
(Repeat for one more layer)
After repeated with layering, top with rest of tomatoes. Put last layer of four noodles and Top with white sauce.
Top with foil and bake in oven 350 for one hour.

Thursday's Dinner


Tonight's dinner is a fishy tale! Your favorite fish...ours is tilapia. This stuffed fish is so scrumptious and satisfying, you'll love to make it over and over again. You can even use the stuffing as an appetizer on your favorite crackers or chips.

Flashy Fish with Spinach Stuffing

Makes 6 to 8 pieces  Serving Size two fillets

Two ten ounce boxes of chopped spinach
One medium chopped onion
four cloves of garlic chopped an peeled
6-8 oz of feta cheese
1/2 teaspoon of basil and oregano
1/2 teaspoon Black pepper and dash of salt
1/2 cup of breadcrumbs
3tablespoons Evoo

In a pan put your 3tablespoons Evoo cook spinach for about seven minutes and drain
saute chopped onion and garlic
In a bowl mix spinach,onion and garlic with feta,spices and breadcrumb.
Place fish on a plate and fill middle with two to three tablespoons of stuffing in center.
Roll and place in baking pan
Coat baking sheet with :
 6 teaspoons of sliced butter
1 cup of water
two teaspoons of white wine and lemon.

Sprinkle fish with paprika and garlic powder.

Bake uncovered at 350 degrees for 45minutes.

Each complete 210 calories.

Clara's Homemade Italian Steak Flat bread-

Today at lunch, we couldn't decide what to eat! The night before we had a new product, Organic Angus London Broil.  Having left overs we decided to make a healthy appetizer for lunch that would satisfy our need for a sandwich without the calorie crunch of a Philly cheese steak.

This Appetizer is Italy meets upper east side minis.

Makes 20 mini flat breads
Serving 4 per Person.

6 slices of steak ( or any left over meat or veggies) or 1/4 pound.
2 tablespoons of Pesto (homemade or jar)
1/2 teaspoon of Horseradish and Olive Oil
3oz of Asiago or Parmesan Cheese
2 tablespoons of Alfredo Sauce
1/4 of an Onion
1 clove of garlic
Dash of Salt and Pepper

Combine all ingredients in food processor and process for two minutes on low.

Spread on flat bread  and bake for 15mins at 375 degrees
